Saturday Brunch

It's Saturday morning.  Bandie Wandie is watching basketball on his computer (which means that we won't be doing anything for the next two hours and I can't even use the internet since his game slows the connection so much).  So the only thing I can do is to make some brunchie.  Since Bandie loves bacon, I added it to the regular grilled cheese. I also made curried pumpkin soup. I actually tried copying the soup they have at Beacon. Kathy and I had it for lunch the other day and it was sooo good. Mine turned out really good as well!

 Curried Pumpkin Soup
1 tablespoon butter
1/2 onion, minced
1 garlic cloved, minced
1 tbs curry powder
1/2 tsp coriander
1/2 tsp cardamon
1/2 tsp cumin
1/4 tsp nutmeg
salt and peper
2 cups chicken broth
1 cup milk
1/2 pumpkin, pureed
garnish with heavy cream and chives
1) Melt butter in pan and add onions.  Cook for 3 min.  Add the powders and stir.
2) Add chicken broth and milk.  Let it simmer for 7-8 min.
3) Add pumpkin, let it simmer for 3-4 min.  Put through food processor or blender if lumpy.
4) Garnish with heavy cream and chives.

Bacon and Tomato Grilled Cheese Sandwiches (for 2)
6 slices of bacon, cooked
8 slices of tomato
4 slices of cheese
4 slices of white bread
butter
1) Spread butter on bread (one side of each slice)
2) Put together sandwich: bread (buttered side face down), cheese, tomato, bacon, bread.
3) Heat skillet and grill.  Push down on sandwich on both sides so it'll brown nicely.
