I bought aji panca paste the other day and the first thing I thought of was making Pad Kee Mao. This is a bit weird since aji panca is Peruvian and Pad Kee Mao is Thai...but it works really well. Aji panca is just red pepper paste anyways. And Bandie Wandie loves this dish!!!
Pad Kee Mao Chanzie Style
The Recipe:
300 g minced pork or chicken (Bandie likes pork)
2 cloves minced garlic
3 chopped coriander
4 chopped basil
1 tablespoon aji panca paste
1/4 cup chicken stock
2 red peppers, cubed
2 green peppers, cubed
2 potatoes, cubed and boiled
fried egg and rice
1) In a greased pan, cook garlic, add aji panca, cook for a minute. Add ground pork and cook until well done.
2) Add chicken stock and let it simmer for 3 min. Add the peppers and potatoes. Let it simmer for 3 more min.
3) Add coriander and basil and cook until done.

better than the pad kee mao you get at thai places because its not just constricted to thai spices and ingredients... chanzie bear makes it with peruvian stuff or guatemalan or russian stuff... i dunno.. but its better than the restaurant... i know that..
sidenote.. about being picky.. which im constantly berated for by chanzie bear... yes im picky.. but not snotty.. its not like i prefer expensive crap like truffles (the mushroomy kind not the the delish choco kind).. i just like what i like... so like im going to tell our kids about playing with other kids nicely.. is... you dont have to LIKE everyone you just have to RESPECT everyone.. and thats how i feel about food ... respect the work or effort or rarity or whatnot about food but dont be forced into liking it... i love chanzie bear and pastrami, and no one could make me change my mind... i dont love (hate) mushrooms and olives, and my mind wont be changed there either...
so sometimes its really hard near impossible to tell chanzie i dont like something she cooks.. so i dont say anything.. but she can tell because i make a face like a trapped beaten dog because i have no escape.. and then she gets sad and makes a face like a trapped beaten dog... and then we're just two trapped beaten dogs... and that pretty much sucks
so in conclusion... love your wife. respect your wife. appreciate your wife.
she does more for you than you'll ever know.
