For Girl's Day...

On Sunday Kathy, Carlie and I got together at Kathy's house.  I brought over this pie since the girls like peanut butter.  I made a small one for Bandie too and he liked it.  He said it was like a big reese's peanut butter cup.

The Recipe:
Makes two small pies 
Crust:
1/4 cup semi-sweet chocolate
1/8 cup butter
1 cup chocolate wafer

1) Preheat oven to 180c
2) In a bowl, combine chocolate and butter, microwave until melted.  Stir in crushed wafers.
Put in pan and bake for 10 min.

Filling:
1/2 cup cream cheese
1/2 cup peanut butter
1/4 cup sugar
1 teaspoon vanilla extract
1/2 cup cream
1/4 cup semi-sweet chocolate

1) In a bowl beat cream cheese, peanut butter, sugar, vanilla with hand mixer.
2) In another bowl, whip the cream.
3) Fold 1/3 of whip cream into peanut butter mix.  Fold in 1/3 cream again with chocolate chips.  Fold in the rest.  Put in fridge for 3 hours.

Topping:
1/4 cup semi-sweet chocolate
1/4 cup heavy cream
peanuts

1) In a bowl combine chocolate and cream.  Microwave until melted.  Wait until room temperature and pour over the peanut butter filling.  Sprinkle nuts.
