After I made the Cheese Bread this morning, I made some brunch for Bandie and I. For some reason, it turned out kinda southwesternish. Maybe I should've made a quiche or onion soup to accompany my cheese bread, but it was goodie.

1 can black beans
1 tbs butter
2 garlic cloves, minced
1/2 onion chopped
300 g ham, diced
1/2 cup corn
1 cup chicken stock
salt and pepper
heavy cream
cilantro green onions
1) Heat butter in pot and cook onion until transparent. Add garlic and ham cook for 4 min.
2) Add chicken stock and simmer for about 10 min on low heat.
3) Meanwhile put half of the canned beans in a food processor and blend until smooth.
4) Add blended beans and canned beans to soup. Let it simmer for 5 min. Add corn and let it simmer for another 2-3 min. Season to taste.
5) Serve with a dash of cream, cilantro and green onions.
Omelette
4 slices of bacon, cut
1 tbs of onion, chopped
2 green peppers, chopped
1/2 tomato, chopped
2 eggs
1 tbs milk
salt and pepper
shredded cheese
1) Cook onions and bacon in a skillet for 3-4 min. Add the green peppers and cook for 2 min. Add the tomatoes and cook until tender. Put in a small bowl.
2) Add eggs and milk into the onion/bacon mixture and add some salt and pepper.
3) Reheat the skillet and add some oil. Pour half the batter and let it cook until bottom is a bit brown. Put cheese on top and cook until it melts. Fold over and put on plate. I served it with pico de gallo.

dont think it was planned to be southwesterny but it turned out that way and was a surprising and delish meal.
