Crab Clam Chowder with Homemade Croutons
The Recipe:
Soup:
5 slices bacon, diced
1 cup chopped onion
3 cups diced potatoes
1 can crab meat
salt and pepper
1 can of clams (keep the juice)
Juice from clams
3 tablespoons flour
2 tablespoons of butter
2 cups milk
1/4 cup white wine
1 cup frozen corn, peas, carrots
1 cube chicken bouillon
1/2 teaspoon parsely
1) Place diced bacon in large stock pot over medium-high heat. Cook until almost crisp. Add onions and crab meat, and clams cook 5 minutes. Set aside.
2) In a large pot cook potatoes in hot water. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are soft.
3) Melt butter, add flour and mix until clumps are gone. Add wine, cook 3 min. Add milk and chicken bouillon and clam juice. Let it simmer for 10 min.
Croutons (2 servings):
3 slices of bread
2 teaspoons of butter, melted or olive oil
1/4 teaspoon garlic
salt
italian herbs
1) Preheat oven to 175 degrees C.
2) Remove crusts from stale bread slices. Brush bread on both sides with melted butter or olive oil. Cut bread slices up into small cubes. Sprinkle with garlic, salt, herbs. Arrange cubes on an ungreased cookie sheet.
3) Bake at 175 degrees C for 15 minutes or until browned.
