When Bandie Wandie and I lived in Paris last year, we loved the Monoprix bread. Monoprix's a cheap supermarket over there, kinda like Ralphs, but much smaller. YES we do know that the French are known for their bread and there's about a million bakeries in Paris. But we loved the supermarket bread because of the price (70 centimes, about $1.40) and the taste. It was crispy on the outside and fluffy on the inside. My mini baguettes turned out just like them! Yay yay!
My Monoprix Mini Baguettes
The Recipe:
400g bread flour
225 ml water
4 g dry yeast
8 g salt
3 g sugar
1) Add all above ingredients and mix.
2) Knead dough for about 10 min.
3) Butter large bowl, place dough and cover. Leave bowl in a warm place, free of drafts and let dough rise for 2 hours.
4) On a floured surface, punch down dough and let the gas out. Leave dough on floured surface for 20 min.
5) Cut dough into two parts (if you want to make baguettes) or 4 parts (if you want to make mini baguettes). Shape each dough.
6) Let dough rise again for about 1 hour.
7) Cut slits on top of dough and bake at 220 c for about 15 min.
