After Bandie and Ry's Spring Break 2008...

Finally some Chanzie Bear cooking after Spring Break...I made this cause I was worried my aji panca paste would go bad soon....

Estofado de Pollo (Peruvian Chicken Stew)

The Recipe:
500 g Chicken Thigh
2 teaspoon aji panca paste
3 garlic cloves minced
1 small onion minced
1/3 cup of dry white wine 
1/2 cup chicken broth
1 teaspoon tomato paste 
2 carrots diced
3 potatoes diced
chives, cilantro for garnish
1) Heat oil in skillet and brown chicken.  Remove from pan.
2) Use same oil and brown onion and garlic.  Add the aji panca paste.
3) Add the chicken and the wine.  Let it simmer for one min.
4) Add the chicken broth, carrots, potatoes and tomato paste.  Cook for about 30 min.
5) Garnish with chives and cilantro.
